Morning Meanderings… waking up to snow and another recipe

Good morning!

Yesterday afternoon I received a text message from college son.  He said that he had awoke in Mankato to about 6 inches of snow and wanted to know what was happening here in Brainerd.  I was happy to say that at that time, it was little flurry flakes and nothing accumulating.

I spoke too soon.

Throughout the day it continued to snow and now by morning… well see for yourself.

I know it is bound to happen but I really am not a fan of snow.

Anyway – moving on….

My friend Cindy is very creative in decorating and in cooking.  At our last girls weekend her cookie recipe was a delicious and deadly combination of chocolate and peanut butter – and they are pretty to look at too.  Here is her recipe.


Peanut Butter Balls

1 bag of powdered sugar

1 can sweetened condensed milk

1/2 cup butter – melted

1 cup peanut butter

Blend and put into refrigerator for 20 minutes

Take out and roll into balls and place on a cookie sheet lined with wax paper

Return to refrigerator for another 20 – 30 minutes

Melt 6 squares of chocolate almond bark in a small bowl and add 3 Tablespoons pie shortening to make it thinner

Take the peanut butter balls out of the refrigerator and dip them into the chocolate mix covering the entire ball

Place back on wax paper and continue until done.

Melt two squares white almond bark and drizzle this with a spoon over the top of the peanut butter balls.

Return them to refrigerator for an hour.  This will firm them and they are ready to serve or to freeze for later use.

Certainly delicious and pretty too!

  1. In Ohio, we call these candies buckeyes after our state nut or something…lol. They are so yummy and I make them every year. Sorry about the snow. It’s starting to get a bit chilly here to so I’ll be interested to see what the week brings weather wise 🙂

      We are suppose to get snow each day this week except Tuesday which is suppose to be back to the 40’s and sunny – and then snow again on Wednesday…..

      Good grief!

  2. Oh stop it, you’re making me hungry! And I’m not even supposed to eat most of those ingredients, but I think I might just have to try these anyway! (I am naughty!).

  3. My in-laws sent pictures Saturday, they woke to over 5 inches and it as still snowing. I miss “home”, well the snow part. The rest of the state I am fine without. You made Buckeyes! I never heard them called that until I moved to this dreadfully hot and humid state which (in my small section) lacks snow. What you pictured is the amount of snow I many see all winter, if I am lucky *sniff* This is the first state (we lived in MN, WI, MI,WY, and now here) where there has not been copious snow. Enjoy the snow. What I would give to make a snow angel once again.

  4. We got four inches of snow, unexpectedly, on Friday night. This started after everyone was out and about for the evening so we all got our first winter driving experience of the year on really bad roads. Love, love that cookie recipe. Think I’ll have to give it a try this afternoon!

  5. Those cookies look fab but even better is the look of that snow covered yard. I would love a white Christmas….even if means 4-5 inches of snow. I see you do not like the snow, I share your sentiments….that is….. when it comes to the tropical HEAT where I stay !!!!!

  6. I’m jealous of that snow!! I’m from Ohio but have lived in Florida for years and I miss the snow VERY much!!

    And yep, those are called Buckeye’s. We leave a little of the peanut butter showing so that it looks like a Buckeye.

  7. I make Buckeyes for my mom and grandmother for their stockings at Christmas so that I can make them and not gorge myself on them. I should probably get started on them and just freeze them since I have to make a double batch.

  9. 6 inches already??? I hope that Michigan stays green for a few more weeks!! I only like snow on Christmas morning 😀

  10. Wow we do not see snow like that here, come to think of it we don’t see snow full stop where I live. It does look beautiful but I enjoy the sun and the sea 🙂

    The Peanut Butter Balls sound delicious but some of the ingredients sound a bit foreign. Powdered sugar is probably icing sugar but I havent heard of chocolate almond bark. And is pie shortening just butter? Thanks Sheila

    1. I prefer the sun and sea Sherri! 🙂 Powdered Sugar is one you don’t know? That is a baking staple around here – it is fluffy and well, its the stuff on powdered sugar donuts 🙂

      Pie shortening I think is just Crisco, my friend Cindy called it pie shortening and I have not heard of that either…. 😀

  11. I’ve never been around snow on a consistent basis to know if I would like having it around all of the time. It looks beautiful though. 🙂

  12. OMG I love this recipe. I’m invited to a cookie swap and I’m thinking I could make these. Yummmmmm. And I heard you all had snow already. We’ve had some furries but nothing real yet. Maybe you’ll get all your snow early and then be done. LOL.
